Grapes are harvested during the month of September. Nerello Mascalese - the predominant varietal in the blend - comes from vineyards approximately 1000 feet above sea level on the lower slopes of the Etna volcano in Sicily. Glera, the grape varietal of Prosecco, comes from vineyards in the Veneto. The grapes are soft pressed and fermentation occurs at 64°F in temperature controlled stainless steel tanks.
