Poli uses copper pot stills for distillation. The final distillate, at 75% abv, then enters a ten-yeah aging program: seven years in Slavonian oak casks, three in Limousin barrels and two months in 55 gallon casks of Allier. After aging , the alcohol level is lowered to 40% by the addition of distilled water. It is then chilled to -6°C, filtered and bottled.
