The pineapples are cooked for about 15 minutes, the fiber and natural sugars are extracted and left to ferment. It is then distilled and matured in American whiskey barrels, 8 months for reposado and 18 months for aged. Calle 23 Tequila stands out for its flavor, smooth, clean and vibrant.
